Reynaldo’s Pork Longaniza Recipe: A Taste of Authenticity


  • 1 kilogram ground pork
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes (optional)


  1. In a large bowl, combine the ground pork, brown sugar, soy sauce, vinegar, minced garlic, paprika, black pepper, salt, dried oregano, and chili flakes (if using). Mix well until all the ingredients are fully incorporated.
  2. Take a small portion of the mixture and roll it into a log shape, around 2 inches long. Repeat with the remaining mixture.
  3. Heat a non-stick pan over medium heat. Place the pork longaniza in the pan, making sure not to overcrowd them. Cook for about 4-5 minutes per side or until they are nicely browned and cooked through.
