Ingredients:
- 1 lb Earl Campbell’s Andouille Sausage, sliced
- 1 lb boneless chicken thighs, cubed
- ½ cup vegetable oil
- ½ cup all-purpose flour
- 1 medium onion, diced
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 1 tsp Cajun seasoning
- ½ tsp cayenne pepper (optional for extra heat)
- 1 bay leaf
- ½ lb shrimp (optional)
- 2 green onions, sliced (for garnish)
- Cooked white rice, for serving
Instructions:
- Heat oil in a large pot over medium heat. Stir in flour and cook, stirring constantly, until a deep brown roux forms (about 10-15 minutes).
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Stir in sliced Andouille Sausage and diced chicken, cooking for 3-4 minutes.
- Add chicken broth, diced tomatoes, Cajun seasoning, cayenne pepper, and bay leaf. Bring to a simmer and cook for 30 minutes.
- If using shrimp, add it in the last 5 minutes of cooking. Remove the bay leaf before serving.
- Serve over cooked white rice and garnish with green onions.
