Recipe: Classic Cajun Andouille Gumbo

Ingredients:

  • 1 package Manda Andouille Sausage (sliced)
  • 1 lb chicken thighs (cut into pieces)
  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sliced okra
  • 2 green onions (chopped, for garnish)
  • Cooked white rice (for serving)

Instructions:

  1. Make the Roux – In a large pot, heat oil over medium heat. Whisk in flour and cook, stirring constantly, until the roux turns a deep brown color (about 15 minutes).

  5. Add Okra & Finish Cooking – Stir in okra and cook for another 10 minutes.
