- 1 lb chicken thighs, diced
- ½ cup vegetable oil
- ½ cup all-purpose flour
- 1 medium onion, diced
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14 oz)
- 1 tsp Cajun seasoning
- ½ tsp smoked paprika
- 1 bay leaf
- ½ lb shrimp (optional)
- 2 green onions, sliced (for garnish)
- Cooked white rice, for serving
Instructions:
- In a large pot, heat oil over medium heat. Stir in flour and cook, stirring constantly, until a deep brown roux forms (about 10-15 minutes).
- Add onion, bell pepper, celery, and garlic. Cook until softened.
