Ingredients:
1 lb Manda Smoked Pork Sausage, sliced
1 lb dry red beans, soaked overnight
1 onion, 1 bell pepper, 2 celery stalks (chopped)
2 cloves garlic, minced
6 cups chicken stock
1 tsp Cajun seasoning
1 bay leaf
4 cups cooked white rice
Instructions:
In a large pot, sauté sausage slices until browned. Remove and set aside.
In the same pot, sauté onion, bell pepper, celery, and garlic until tender.
Add beans, stock, Cajun seasoning, and bay leaf. Simmer 1 ½ to 2 hours until beans are tender.
Return sausage to the pot and simmer 20 more minutes.
