Apco Apache Chorizo Pasta

Ingredients:

• 250g Apco Apache Chorizo, sliced
• 300g pasta
• 1 onion, finely diced
• 3 cloves of garlic, minced
• 1 red bell pepper, diced
• 1 can of diced tomatoes
• 1 teaspoon paprika
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
• Grated Parmesan cheese (optional)
  Instructions:

1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large pan, heat some olive oil over medium heat.
3. Add the diced onion and minced garlic. Sauté until the onion becomes translucent.
4. Add the sliced Apache Chorizo and diced red bell pepper. Cook for about 5 minutes, until the chorizo starts to brown.
5. Stir in the diced tomatoes and paprika. Season with salt and pepper.
6. Let the sauce simmer for about 10 minutes, allowing the flavors to meld together.
7. Add the cooked pasta to the pan and toss until well coated with the sauce.
8. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
