Recipe Idea: Smoked Sausage Skillet Breakfast
Ingredients:
1 lb Meyer’s Elgin Smoked Sausage, sliced
4 large eggs
1 cup diced potatoes
½ cup diced onions and bell peppers
Salt and pepper to taste
Instructions:
In a skillet, cook sausage slices until browned. Remove and set aside.
Sauté onions, bell peppers, and potatoes until tender.
Return sausage to skillet and crack eggs over mixture.
Stir gently to scramble until eggs are cooked through.
